Why didn’t Apple make a 24GB/1TB or 24GB/2TB SKU for these? They’re custom order so there’s never a sale on those configs.

I think because it's just a more rarely purchased configuration? I suspect a lot of people needing that much RAM and SSD skew toward the Pros instead of Airs.

You might want to keep an eye on Apple's Refurbished page ('https://www.apple.com/shop/refurbished/'). I see quite a few M2 and M3 Airs with 24 GB of RAM up there right now with some steep discounts vs. what you'd pay to configure it brand new.

Also I see Refurb Tracker is still up. It lets you set up custom alerts for specific configurations. I've used it in the past and it's pretty great!

But I wonder if all of the defenders who have passionately argued that 8GB is plenty for yeas now while Apple clung to that as base will then call Apple stupid for putting "too much" RAM in if the new base is 16GB???

I tend to agree, but the larger point is that you don't want to be on hardware specs that are now below what Apple will actually be targeting for new features and as a baseline on performance expectations for the OS

and quick on their heels, Best Buy (total members) has price matched (and they throw in AppleCare). MicroCenter's advertised price is higher but they will also price match if you show them Amazon's link (been there, done that).

That's rhetorical. I don't actually wonder. Just like when Apple finally embraced phablet (phones) and the defenders were soon referring to the formerly "perfect" screen sizes as "puny", 8GB will soon be cast as insufficient to help push upgrades to the new base.

If you’d actually use an 8 gig ram model you’d realize it is plenty for most people. My buddy constantly edits 4k surgery videos on his M2 air with only 8 gigs ram.

How about try it instead of parrot what crappy tech youtubers say? ;)

EDIT: Instead of downvotes and laugh emojis why not try it? Download the free trial of Final Cut and edit some 4k video, you'll see it works perfectly fine, even hours of video.

YouTubers like to run useless benchmarks, any person worth their salt in IT knows how utterly useless benchmark software is.

Again, don't take my word for it, try it :)

There's always rationalization to fit the change of opinion. Too bad for those who bought what was spun as "8GB is plenty for most people" only weeks ago... without much qualification about A.I. coming and needing more RAM. Just push what Apple is pushing then... and then push upgrades to what Apple will be pushing soon... as if no such "8GB is plenty" opinions were ever posted.
